You will find this dish at most Thai Restaurants but made with chicken. I wanted to do something different and add seafood because my husband and I love seafood and hey why not! This dish has all the wonderful flavors from coconut milk, lemongrass, kaffir lime leaves, galangal (I think they are in the ginger family), and chile peppers. It should be a little creamy, sour, salty, and spicy! This soup can be eaten with jasmine rice and also made into a noodle dish with any type of noodles.
