Banh Xeo is a Savory Vietnamese Fried Crepe made up of rice flour, water, a little coconut cream or coconut milk and some tumeric powder to give it that nice beautiful golden yellow color. These crepes are usually filled with pork belly, shrimp, bean sprouts, and sometimes yellow mung beans, and eaten with lettuce, some fresh asian herbs and a delicious Spicy Garlic Fish Sauce Dipping Sauce. I love rolling mine in rice paper, with some lettuce and fresh herbs and dipping it in the garlic chili fish sauce. I had pre marinated pork riblets that I marinated with my Spicy Garlic Cilantro Marinade I made a few months ago that I had stored in the freezer. I decided to take them out and fry them up Thai Style & eat it with jasmine rice. I love pre marinading meats and storing them in the freezer so I can just take them out to defrost the night before or the morning of and it makes for a quick and easy meal. This is a great vegetarian dish you can easily whip up at home in no time flat. Its well known in Asia. Most asian grocery stores will have them as Ong Choy (in chinese) or Rau Muang (in Vietnamese). This is a very easy and fast meal for the whole family to enjoy. It is very YUMMY and is gluten free. I made this dish while my niece stayed with us and she LOVED it! She went for seconds ❤ I recently found out that I have hypothyroid and I read that cutting out gluten might help me with my hypothyroidism. So, I have been cutting out some gluten and also some dairy from my diet a little at a time. The only dairy in this recipe is the freshly grated parmesan cheese. You can make this dairy free by not topping the pasta with the parmesan cheese. Just because it is gluten free doesn’t mean it isn’t DELICIOUS 🙂 I hope you like this recipe!
