Mushroom Soy Sauce 2/3 cups
Sesame Oil 1/2 teaspoon
Rice Vinegar 1/2 teaspoon
Salt 1/8 teaspoon
Black Pepper 2 pinches
Coconut Sugar 3 tablespoons
(coconut sugar isn’t that sweet so I had to add a lot) (you can also use any sugar or sweetener of your preference)
Mushrooms (any kind you like)
Red Bell Peppers 1 or more (your preference of course you don’t have to add any if you don’t want to)
Shallots 2-3 (you can also use any onion you like)
Chopped Garlic 4-5 cloves (i love garlic the more for me the yummier)
Lets Get Started:
In a small bowl combine all the seasoning ingredients together and do a taste test. (At this time you can add more sugar or salt you like or more rice vinegar if you like it a little more sour). Marinate the beef with the marinade mixture and put it to the side or in the fridge for later.
While the beef is marinating you can cut and clean the asparagus, mushrooms, red bell peppers, shallots, & chop up the garlic.
Heat oil in pan on medium heat and add beef and asparagus and cook for 5-6 minutes.
Add chopped garlic and shallots and cook for another 5 minutes.
Lastly add mushrooms and bell peppers and cook for another 5 minutes.
*I added the garlic and shallots, and the mushrooms and bell peppers at different times because I don’t like them to get too soft. I like them to be cooked and still have a little crunch or texture to them.
I hope you like it. It is very simple and of course you can make it you own by adding any vegetables you like, you can also make this with chicken or pork instead of beef, and even make it all vegetables and mushrooms or add in some tofu.
