This dish is a side dish you will find in all Korean BBQ Restaurants. I love how this dish is so simple and easy to make and is so delicious! I make this all the time when I make Korean BBQ at home or if I want to eat something simple with just a bowl of rice.

Persian Cucumbers 2
Rice Vinegar 1/4 teaspoon
Sesame Oil 1/2 teaspoon
Sesame Seeds 1/2 teaspoon
Chili Pepper Powder (optional) 1/2 teaspoon (more or less depending on preference)
Salt a pinch (for soaking the cucumbers) another pinch (for seasoning)
Lets Get Started:
Thinly slice the cucumbers with a mandolin or by hand. It is much easier and faster with a mandolin. Mandolin is a good tool to have in the kitchen.
Place the sliced cucumbers in a colander and place it in a bowl.
Sprinkle the cucumbers with a pinch of salt and mix it up a little bit making sure the salt is evenly distributed. And leave for 30 minutes to let all the liquid release from the cucumbers.
While you are waiting for the cucumbers you will combine all the seasoning ingredients in a small bowl and mix it up. You can add more or less of the chili peppers powder depending on your taste.
After 30 minutes or so rinse the cucumbers to get rid of most of the salt and squeeze the cucumbers again to get rid of all the liquid. And place the cucumbers in a mixing bowl.
Add the seasoning mix and mix it together with the cucumbers make sure you coat all the cucumbers with the seasoning. Then you can do a taste test and see if you need to add a little bit more salt or not. There will still be liquid from the cucumbers that will dilute the salt so you might have to add more salt in the end.
