Banh Xeo (Savory Vietnamese Fried Crepes)

Banh Xeo is a Savory Vietnamese Fried Crepe made up of rice flour, water, a little coconut cream or coconut milk and some tumeric powder to give it that nice beautiful golden yellow color. These crepes are usually filled with pork belly, shrimp, bean sprouts, and sometimes yellow mung beans, and eaten with lettuce, some fresh asian herbs and a delicious Spicy Garlic Fish Sauce Dipping Sauce. I love rolling mine in rice paper, with some lettuce and fresh herbs and dipping it in the garlic chili fish sauce.
