Thai Beef & Cucumber Salad

Good Quality Steak   2lb  (at least an inch thick)

Sea Salt   (to taste)

Fresh Ground Black Pepper   (to taste)

Small Mini Cucumbers   2  (thinly sliced)

Cherry Tomatoes (optional)    1/3 cups  (cut in half)

Mint Leaves   1/3 cup


Sauce Dressing:

Thai Chili Peppers   3+ (finely chopped) (depending on your spice level preference) (Note: You can also use dried thai chili pepper flakes instead)

Garlic   3 cloves  (chopped)

Red Onion   1/4 cups  (thinly sliced)

Cilantro   1/4 cups  (chopped)

Fish Sauce   1/4 cups

Fresh Lime Juice   1/4 cups

Coconut Sugar   2 tablespoons


Lets Get Started:

Combine all the sauce dressing ingredients together and mix it up and put it to the side to let the flavors come together. You can do a taste test to see if you want it more sour add a little more lime, or add a little more coconut sugar to make it sweeter, or fish sauce if you want it a little more salty. Everyone’s taste buds are different so season it to your liking.

Sprinkle a pinch of sea salt and fresh black pepper on both sides of the steaks. Cook the steaks to your liking and let the meat rest.

While you let the steaks rest you can prep the cucumbers, cherry tomatoes, and mint leaves.

Thinly slice the steaks and put it all in a big mixing bowl.

Add the thinly sliced cucumbers, (optional tomatoes), and mint leaves on top of the steak.

Pour the sauce dressing in with the steak and vegetables and mix it all up.

Plate it & enjoy with a bowl of rice, sticky rice, or some lettuce.
